My breakfasts solely consist of: double chocolate oat muffins (courtesy of Fuel), pancakes with a million toppings, stodgy oatmeal with fruit and now I can finally add waffles to the list.
These waffles really are incredible and I am honestly in awe of how well they turned out, especially on the first trial. They're cakey, fluffy and light and are mouthwateringly irresistible with a drizzle of syrup.
This recipe uses buckwheat flour which I wouldn't recommend replacing with other flours. Buckwheat flour is dense and soaks up a lot of liquid. If you *have to* substitute, I would recommend 60g of oat flour to keep it gluten-free. You may use regular plain flour but I think the waffles will lose their charm and sweet nuttiness.
Matcha Buckwheat Waffles
Vegan, gluten-free, sugar-free
Makes 4 mini waffles (serves 1)
Ingredients
40g of buckwheat flour
1/2 tsp of matcha
1/2 tsp of baking powder
1 tsp of granulated sweetener (I used erythritol)
Sprinkle of cinnamon
1/3 cup of warm water (*I usually leave 1-2 tbsps behind for cakier waffles)
10 drops of MyProtein White Chocolate FlavDrops™ (sub with 1 tsp of vanilla extract)
Oil spray
Optional: green food dye
Method
Combine buckwheat flour, matcha, baking powder, sweetener and cinnamon
Gradually pour in the water* and FlavDrops™ if using. You should have a silky, runny batter that easily drips off your spoon.
Refrigerate the batter for 10 minutes to further thicken. If the batter is too thick after this time, add the remaining water.
Spray the waffle maker* with a few sprays of oil (repeat this for each waffle).
Pour 2 tablespoons of batter into your waffle maker and cook according to package instructions. This is usually 1.5 - 2 minutes for me.
Top with your favourite toppings (see mine below!)
Recommended toppings
Classic: Soy yoghurt, maple syrup, fresh raspberries, cinnamon
Strawberries n cream: Fresh strawberries, coconut cream, chocolate shavings
Chocoholic: white chocolate chips and syrup
Blueberry cheesecake: vegan cream cheese, fresh blueberries and/or blueberry compote
Nutty: nut butter drizzle and fresh fruit
Notes
I use Urban Outfitter's (Dash) mini waffle maker (click the button below to purchase)
I usually leave 1-2 tbsps of water behind for cakier waffles. If you want lighter waffles add the whole 1/3 cup (80 ml)
