Two Ingredient Nice Cream (Vegan)

If there ever was a chance to eat dessert for breakfast this is it! Don’t be deceived this may look and sound decadent but it’s packed full of nutrients and fresh ingredients making it a nutritious AND delicious option for breakfast or even a snack!


Nice cream is a fresh, nutritious take on ice cream and completely absent of any added sugars. It is essentially frozen banana that has been blitzed into a smooth thick purée much like ice-cream! Since bananas are very sweet (especially ripe bananas) it means you don't need to add any sweetners and can enjoy it as it is.


This also serves as a great base for other flavours. I've made banana bread, chocolate and even coconut nice cream using the recipe below as a base. When making this, it is important to eat it as soon as possible so it maintains that ice-cream like consistency. It does melt very quickly so be warned!



 

Two Ingredient Nice Cream

(Vegan, dairy free and no added sugar)

Serves 1

Ingredients

  • 1 very ripe banana cut into small chunks and frozen for at least 8 hours

  • A bit of dairy free milk

Optional add ins

  • Myprotein flavdrops of choice (I've used toffee, coconut and vanilla and they work wonders!)

  • 2 tsp of cocoa or cacao powder

  • Chocolate chips

  • Other frozen fruit such as raspberries, strawberries, mango etc

  • Instant coffee


Method

  1. Pour in the banana chunks into a food processer and blitz until creamy, add some milk to loosen if necessary

  2. For a firmer texture leave in the freezer for 30 minutes before serving.


Toppings

  • I like to top my nice cream with fresh fruit and hemp hearts but you could also include:

    • Crunch: Cacao nibs, chopped nuts, popcorn, seeds, cereals or puffed grains

    • Soft: Raisins, dates, dried fruit, shredded coconut or fresh berries.

    • Drizzle: Nut butter, agave nectar, date syrup, chocolate sauce or fruit compôte
