3 Ingredient Kale Tortillas (Vegan)

I love incorporating vegetables into unlikely foods to boost the nutritional value. Kale, without a doubt, is my favourite vegetable. It's so jam packed with vitamins and minerals, as well as fibre that it almost feels like you're taking a nutritional supplement when you eat it. Indeed, Kale is one of the most nutrient dense foods on the planet!


This recipe simply uses pureed kale, wholewheat flour and salt and makes three mini tortillas (or two big tortillas for wraps). I absolutely love using these tortillas for tres tacos as they're soft and don't get soggy with the filling!



I made vegan mince 'beef' tacos with guacamole, veggies and soy yogurt! The tortillas are really soft and sat beautifully in my little cactus taco holders :)

 

Kale Tortillas

Serves 1 - Makes 3 mini tortillas (or two large ones)

Vegan

Ingredients

1/2 cup of curly kale (can substitute with spinach, rocket, cavolo nero or any other leafy green)

10 ml of water

1/3 cup of wholewheat bread flour (You can also use non-bread flours)

Pinch of salt


Method

  1. Wilt the kale in a pan with a little bit of water until the leaves are flaccid and shrunken in size.

  2. Add the kale to a blender with the 10 ml of water and blitz until a thick paste-like puree forms. Don't worry if it isn't completely smooth. If it doesn't blitz well, add more water.

  3. Stir the puree into the flour and salt. Mix with your hands until a firm ball forms. Add more water if neccessary but you want a firm dough.

  4. Flour your surface and divide the dough into three.

  5. Roll out very thinly into small circles. You want it less than a millimetre thickness like a typical flour tortilla.

  6. Dust each surface with flour

  7. Cook on medium heat for 30 seconds per side. You can tell it's cooked as the tortilla becomes paler in colour.


Boost this recipe

  • Add seeds: Chia seeds, hemp seeds, poppy seeds will work wonders and give you that extra burst of protein and fat

  • Add spices and herbs: cayenne, smoked paprika, cumin, nutritional yeast etc. will add some extra flavour

  • Use different flours: Try blending your favourite grains to make flour such as oat flour, rye flour, spelt flour etc to give a different underlying flavour
