Super Quick Pancakes (GF, Vegan)

After the success of my oat chocolate cake, I decided to see if I could stretch the capabilities of oats and make something else. This recipe uses oat flour instead of wheat flour and I think this gives the pancakes a nice nuttiness. It also makes the pancakes super fluffy and almost cakey which I absolutely adore. I originally planned to make this recipe purely gluten free*, but I realised using one egg would be too much and mess up the proportions so I substituted an egg with a chia egg. This is such a great alternative and really easy and quick to prepare + it's minimal mess and there is no eggy dishes left over!

This recipe makes 4 delicious pancakes!

 

Super Quick Pancakes

Vegan and GF

Serves 1 ( Makes 4 small pancakes)


Pancake Ingredients

40g of oat flour

1/3 of a chia egg (1 tsp of chia seeds + 3 teaspoons of water)

80ml of milk ( I used almond milk)

1/4 tsp of cinnamon (cassia)

1 teaspoon of butter


Compote ingredients

80g of fresh berries ( I used raspberries and blueberries)

A bit of water

1 teaspoon of cane sugar


Method

  1. Make the chia egg by incorporating the ingredients together and stirring well

  2. Pour the flour into a medium sized bowl and make a well in the middle, pour the milk into the centre

  3. Add the chia egg and cinnamon, stir well until the batter is smooth

  4. Add the butter to a medium sized pan and heat on medium high heat

  5. Once the butter starts to sizzle, pour the batter into the centre of the pan. Pour enough batter to make a roughly 10cm diameter pancake

  6. Heat each side for about 1 minute. You will know when to flip when the top of the pancake has cooked as well.

  7. After the pancakes are made, cover with tinfoil and leave to the side. Add the berries and a bit of water to a small pan and heat on medium-high.

  8. Once the fruit starts to breakdown, stir and add the sugar. Take the compote off the heat once it thickens to your liking.

  9. Butter the pancakes and pour the compote on top. Top with any other toppings of your choice
