We all love a good stir fry don't we? Stir fries are the perfect way to use all your leftover vegetables and make a tasty dish.
On the topic of leftovers, my pantry is full of many packets of rice that are almost finished but there's not enough rice to make one portion. To combat this, I decided to mix all the leftover rice together and make this wonderful colourful tricolour rice.
It was quite a science to execute, as the black rice, brown rice and jasmine rice have different cooking times. So, I cooked the black rice first, added the brown rice to the pan and then finally the jasmine rice. This meant I could drain the rice at the exact same time.
Not only did the rice look pretty, it is packed with nutrients and protein thanks to the ridiculously high nutritional content of the black and brown rice!
If you do not have black rice or do not want to make the tricolour rice, you can easily replace with 2 portions of long grain rice
